
Much like AJESIN RAMEN HOUSE in Robinsons Ermita, RAMEN BAR makes use of the TONKOTSU variety (or Pork Bone Broth) as its main broth. It's basically made from boiling pork bones, fat, and collagen over high heat for many hours (some reaching 20 hours or more), which suffuses the broth with a hearty pork flavor and a creamy consistency of milk or melted butter.
We arrived at the eatery a little past 11:00am and already the customers were starting to fill up the establishment fast, luckily for us, we got a nice seat situated just across the airconditioner for a more cooler experience. hehehehehe Since it was just the two of us, we could only order a limited number of food items ......
We started with an order of SPICY KAKUNI BUNS which is Spicy Melt in Your Mouth Pork Belly wrapped in Special White Bun

It wasn't really "Melt in your Mouth" ...... its actually a little dry hence tough to chew on and the sauce wasn't as spicy as I would like. The buns had the texture and consistency of chinese siopao or kwa pao.
For our Ramen, we ordered the following:
SPICY KARAAGE RAMEN
Spicy Shoyu Ramen topped with Fried Boneless Chicken

The pork bone broth is just delicious, very flavorful but not too salty and is quite light on the tummy even if it looks rather rich and milky. The noodles are very nice and firm.....While still eating my Pork Buns, I actually had my bowl of ramen resting in the table for a good ten minutes. And even after such time, the noodles still retain their firmess and bounciness.
The Chicken Karaage is also good, slightly crispy but tender on the inside, batter is light but very flavorful. I however was looking for the "spicy" part.

I assumed it called Ramen Bar Special # 1 (though I glanced at their menu and I didn't see any # 2. hahahaha). Much like our first order, this one uses the same Tonkotsu broth except the toppings are different. Instead of the chicken karaage, this one has Tamago (Egg), Naruto (Sliced Fish Cake), Nori (Seaweed), Negi (Onion), Chasu (bbq pork), and Kakuni (braised pork belly).
